This is for the serious foodie.

It would be a good idea for vegetarians to seek refuge elsewhere in October as for 5 nights it will be a heaven for carnivores in central Italy at the foot of the Apennine mountains. This autumn you have the change to savour the food as well as experiencing life on an Italian Farm if you take a unique holiday at La Tavola Marche, the Organic farm, inn and cookery school. You can go mushroom hunting, butcher pigs, make sausages, and also slaughter and butcher chickens.

There will be hands on cookery classes incorporating all the freshly butchered meats followed by a fabulous wine tour complete with tastings. Another great feature of La Tavola Marche is that you know exactly where all the food comes from; the vegetables are freshly picked from the garden, the fresh meat comes from the free range chickens or the farm next door, and you will go foraging in the hills for the mushrooms.

So what can you expect during this unique experience? Well, on your first night you will receive a warm welcome at the 300 year old stone farmhouse and be greeted by the sumptuous smells of a slow roasting fire. There will then be a feast to remember with each of the 5 sumptuous courses being paired with local Marche wines and topped with delicious and decadent truffles. Best of all this is just the start if your blissful, gastronomic adventure.

You get to spend the morning with the local Urbanian butcher for a live butchering demonstration, giving you a chance to follow the process, then identify and trim the different cuts of the pork, and learn the best cooking techniques for each cut, as well as coming away knowing a range of the basic butchery skills. You will also learn the basics of the ageing process, and how to make sausages, cured meats and salami.

When you get back to the farmhouse you will get to stuff your own sausages and grill them over the open fire before eating them for dinner. After a meat filled day, you get the next day to relax and sample the best of the wines from the best of the family run vineyards of Le Marche during a full day wine tour with tasting. Later in the week you can hike into the woods get down and dirty while foraging for mushrooms.

You also get to slaughter and butcher the free range chickens before incorporating then into a cooking class where you will create roasts, stews and a classic stock.

La Tavola Marche Agriturismo and Cooking School is a 300 year old stone farmhouse inn, set on 500 acres of organic farmland, rolling hills and truffle rich woods specializing in hands-on, farm to fork cooking classes. Guest accommodations are spacious apartments with private bedrooms, en-suite bathroom, kitchen, dinning room, wood beam ceilings, tile floors and stone fireplaces!
