At a national contest was the venue for a student showing his culinary flair and expertise as the budding chef created the winning dessert. Steve Amos a Blackburn College student was teamed with Craig Lonsdale a chef from United Utilities Warrington where they were hailed champions at the Let’s Go British contest. Amos came through with an apple suet dessert from the box of ingredients that were unknown to him before the contest.
The duo came in second in their regional heat but with Steve’s creation of sweetness that swayed the judges to be named best dessert he and Craig were named overall winners. Steve said how nervous he was about competing in the event but said he knew how much it would mean to him and his career. He also was confident he could show the judges his talent and ideas.
What won it for them was their overall menu that consisted of beef fillet with a chicken parfait dressed in cured ham and spiced hake loin pan fried with cannellini beans and smoked bacon veloute, vegetable and potato panache and steamed apple pudding drenched with a crème anglaise shot glass. On June 9 the menu will be served in the Scholars Restaurant.
